I could not find a written answer to that question. One can find articles that support the opposite line of thinking without clearly explaining it. I believe the answer is that fat milk facilitates emulsification. Without fats, the digestive system cannot adequately absorb the proteins in the milk. Therefore, it spikes a higher insulin response than fat dairy. The conclusion is that fatty dairy is healthier than lean milk and dairy products. (Of course, to the proper extent)
