There are two primary considerations. Since oils tend to burn at high heat, choosing an oil with a smoking temperature as high as possible is advisable. The other consideration is taste. The oils with the highest smoking temperature are ghee butter (refined butter without milk solids) and coconut oil. These are saturated fats. Among the vegetable oils, you can find avocado oil (which is particularly expensive and has a distinctive taste) and several high-quality and relatively neutral oils such as peanut oil and grape seed oil. (There are, of course, other oils with high smoking temperatures)
