Deep frying is mistakenly perceived as preferable, as the boiling oil closes the food immediately and allows less oil absorption. But deep-frying requires prolonged heating of the oil to high temperatures that can cause it to burn and make trans fat extremely harmful. Therefore, light and fast frying are preferable, even if they allow for the absorption of a higher amount of oil.
